I haven’t been able to stop craving that Burrata and figs salad that I made last month. It was so good that I could literally have it everyday. So, determined to make it one more time, I hopped on over to the supermarket a few days ago to buy a second batch of ingredients.

I went straight over to the fruit section, and over to where I picked up the brown figs last time. You should have seen my face when the brown figs were nowhere to be seen! But I wasn’t about to give up so easily, so I searched for other fig varieties and that is how I met the Kadota Fig!

This fig is green on the outside, which made me hesitate for a second, unsure of what it would taste like…but I am so glad I brought these home with me! They are just as sweet and work great on the salad.

May also add that I found actual Burrata cheese this time! YAY!

I had some figs left over, so I decided to experiment, and it worked! Take a look at my peppered goat cheese-filled figs, drizzled in olive oil, sea salt, pepper and a pinch of lemon.

For Creative Children Therapy

Creative Children Therapy (CCT) is the local non-profit organization selected earlier this year for Ad2 Miami‘s 2010 Public Service Campaign.

On September 30, CCT will host their 4th annual exhibition “Inspired by the Beat,” at the Cisneros Fontanals Art Foundation (CIFO) in Miami. All event proceeds will go to funding the organization’s art programs, which focus on helping special needs children in the Miami community.

This year’s event will feature local artist David ‘LEBO’ Le Batard alongside 23 artists from CCT’s Artistic Realization Technologies program, also known as CCT/A.R.T.

As part of the CCT/A.R.T. program, artists known as trackers act as the children’s extended arms by receiving their creative instruction and painting what they cannot physically paint themselves. Through this literally enabling system, children with even the most severe physical challenges are given the opportunity of uncompromised creative self-expression. You’d be surprised how far a simple wink of an eye can go!

CCT is dedicated to improve the quality of life of children with special needs through what they call “superior therapeutic intervention.” In addition to providing medical services, their main goal is to provide creative programs that help these kids develop socially and artistically.

Take a look at CCT’s event invitation here or visit their Facebook event page. Tickets can be purchased here for $20 or for $30 at the door. All proceeds go to CCT/A.R.T.

I hope you will join us!

Co-pilot for a day

Here are some cool videos I took during our trip to Puerto Rico.

When we landed in Culebra the first day, the landing was pretty interesting (a bit rollercoasterish)! Here I was sitting way in the back of the tiny plane, but I think you can still see what I mean. Make sure you watch to the end!

On our way back from Culebra to San Juan I got lucky and sat up front with the pilot, so I was able to record a better take off and landing!

I hope everyone’s having a great weekend! xoxo

Ad2 Miami

I woke up feeling a bit serious today, so I want to tell you about a very cool organization that I am a part of.

Ad2 Miami is a sub-division of the Advertising Federation of Greater Miami (AdFed Miami), which is part of the American Advertising Federation (AAF).

The Ad2 Division is comprised of a nationwide network of clubs whose members are employed or interested in advertising and/or public relations, and are 32 years of age or younger. Through a series of monthly events, members of Ad2 can network, attend educational sessions, be involved in, and get a good feel for the industry.

For the past few years, I have volunteered on the Board of Ad2 Miami as Communications Chair. Each year, the Board of Directors follows a rigorous process to select a local non-profit organization to be the focus of our annual Public Service Campaign.

The annual Public Service Campaign is the reason why I participate in Ad2 and is what really sets Ad2 apart from any other Adv/PR organization.

The campaign consists of helping one local non-profit organization without any means for promoting themselves. Efforts can include the development of an advertising plan comprised of television, radio, print, outdoor and interactive, including creative work.  Other efforts include assistance with corporate branding (i.e. logo design, production of collateral materials, PR initiatives, etc.).

The time and effort invested in all this is very real. The results are so gratifying because you know they make a real difference in the lives of many in our community that are not so fortunate.

I encourage you to learn more about A2 Miami, or other organizations in your community. You’d be surprised how much you can help with just the smallest effort!

The Monday diet

I must confess that I have become one of those girls that starts to diet every Monday…sigh. Monday diets are usually a result of weekend overeating. In my case, I’ve always enjoyed blaming my mom a little bit for this, since she used to tell us that whatever we ate on Sundays didn’t count.  For some inexplainable reason, I also grew up thinking that the food on the plane or on vacations didn’t count either – I wish!

Apart from my regular yearly resolution, this year I wanted to be more creative when preparing food at home. The idea is to incorporate lots of fresh foods with lots of color, textures and flavors into my everyday cooking.  I’ve been doing quite well with this, and that’s where some of my blog post inspiration has come from, like you can see here and here.

This week’s “Monday diet” included pan-seared fresh scallops and a salad (tomato, cucumber and romaine lettuce with homemade balsamic vinaigrette).  It was healthy and delicious, and earned me many brownie points at home!
