My First Risotto

There’s nothing more comforting than a warm bowl of creamy risotto.  It’s one of my favorite Italian dishes, and I’ve been wanting to learn how to make it for a long time.  I definitely searched for the right recipe more than once, always feeling that I would be in over my head: so many steps, so much stirring.

During my last trip to the supermarket I acted on impulse and grabbed a bag of arborio rice. It felt right, I felt determined. It was definitely a long time coming.

After going through countless recipes in search of the perfect one, I ran into this very simple step-by-step.

Encouraged by its simplicity, I followed it and chose the ingredients to make it my own.

I used Pinot Grigio, olive oil, fresh tomatoes, asparagus, and shrimp. I seasoned with fresh lime juice, sea salt, fresh ground pepper, and shaved parmesan cheese. Oh, and I didn’t use any onions.

I named it the Lemon Asparagus Shrimp Risotto. Definitely my first of many.

If that is your first risotto I have to congratulate you because it certainly looks amazing, I’m sure it was delicious. I’ve made risotto a couple of times myself because after trying it for the first time I realized it involves a lot of steps but it’s not so hard after all and it earns you many, many points at home :).
