Hot hot habanero

I purchased these small colorful habanero peppers just because they looked so pretty and smelled so strong & nice.  I had never cooked with these little ones before so I wasn’t sure what to make with them.

Inspired by Pati’s tilapia, I decided to create a recipe of my own. I laid the fish over a foil-covered oven sheet and seasoned with sea salt, ground pepper, and basil leaves. Then I sprinkled the diced tomatoes and habanero peppers all over. I closed the foil to form a packet and baked for 25 minutes at 350 degrees.

I served it over couscous and it was the perfect match.  De-licious!
