Roast Beef

I’ve always loved a homemade roast beef, but had never attempted to make it at home.  Until now.

I wanted a simple recipe and I don’t own a meat thermometer, so I searched the web for different suggestions on how to prepare this and how long to roast the beef. I ended up combining a few of the tips I found, and the result was great. I’m bound to make this one again and again.

2 lb. Eye of Round Roast
Yellow or Dijon Mustard
Worcestershire Sauce (I like Lea & Perrins)
Garlic salt
Black pepper

Using your hands, rub the roast with a generous amount of mustard and worcestershire sauce, so that it is well covered. Rub in some garlic salt and pepper, and then let it marinate in the fridge for at least a few hours or preferably overnight.

Bring the roast to room temperature, and preheat the oven to 500 degrees.  When you place the roast in the oven, lower the temperature to 475 degrees and leave it for 35 minutes. Turn the oven off and leave the roast inside the oven for an extra 40 minutes to an hour, depending on how well done you want it.  I left mine in for 55 mins, and the result was a pink center that was only slightly overcooked for my taste.

Let the roast cool down for about 10 minutes before carving into very thin slices. Enjoy!
