Lemon-Cornmeal Cookies

The dire truth is that I haven’t stopped baking since I received my Kitchenaid. I’m sure you’ve noticed.

These particular cookies were introduced to me a few years ago by Lorraine, a friend from work.  I have definitely nagged her a few times, practically begging her to make them for me.

I used unbleached all-purpose flour instead of the regular kind (I try to stay away from buying products that contain bleached flour in general), and replaced white sugar with brown sugar because it’s what I had at home.

The cookies turned out delicious despite my revisions to the original recipe. A batch of perfectly flaky and lemony cookies.
