Lemon Spinach Tilapia

{Lemon Spinach Tilapia served with asparagus}

This recipe couldn’t be quicker and it’s guaranteed to please every time.

Similar to this recipe, the fish is wrapped in foil with the rest of the ingredients and baked. The method is fool-proof and the ingredients can really be anything you want.


Tilapia filets (snapper and salmon work well too)
Thin lemon slices
Fresh spinach
Sea salt
Ground black pepper
Aluminum foil


Pre-heat oven to 350 degrees F. Place each filet on a piece of aluminum foil (enough to wrap around it).  Rub each filet with sea salt and pepper on both sides. Layer the thin lemon slices over the fish, and finish off with a mountain of spinach (the spinach leaves will reduce to nothing with the steam, so be very generous).

Now wrap the aluminum foil tightly, so the steam doesn’t escape while cooking. Place on a cookie sheet or any other oven safe tray and into the center of the oven. Bake for 35 minutes.  At that time, check the fish to make sure it is cooked through (thicker filets may take up to 40 minutes).
