Floret Salad

I often crave salads that go above and beyond the ordinary tomatoes and lettuce. This one in particular is quick and easy to make, and delicious. The sweet/salty combination of the prosciutto and the raisins work great with the crunchiness of the florets. The dressing is both a little tangy and sweet.

Here’s what you need:

– Raw broccoli florets
– Raw cauliflower florets
– Prosciutto (I first remove the fatty white parts and then I cut it into little pieces), or substitute with bacon bits or your favorite cold cut
– Golden raisins (regular raisins or dried cranberries also work)

The reason I’m not sharing the exact amount needed of each ingredient is because I don’t measure them.  I simply add enough of each ingredient to make a colorful salad. You should play around with the quantities to see what works best for you.

For the dressing (here I do measure):

– 1 cup non-fat plain greek yogurt
– 2 tablespoons of white or other vinegar (not balsamic)
– 1 teaspoon dijon or grain mustard
– 1 packet of stevia in the raw (or your preferred sweetener)
*Feel free to add more vinegar, mustard, or salt and pepper to taste

The preparation is very easy, just mix all ingredients together and enjoy!
