Uruguayan Chivito

It must have been the post-wedding nostalgia, but for the entire month of December our home cooking seemed heavily influenced by our trip.

The Chivito is a Uruguayan classic. It is a sandwich typically loaded with a thin slice of grilled beef, a fried egg, ham, cheese, bacon (or bacon bits in this case), lettuce, tomatoes, olives, and the sauce of your choice -or the works: mustard, ketchup, mayo.   Preparing it at home was definitely a team effort.
