Irish Soda Bread

{Soda bread, corned beef & Dubliner cheese}

Last night we had an early St. Patrick’s day dinner at home.  We’ve never been big on St. Patty’s, but ever since I had Emily’s focaccia earlier this week I was intent on attempting to make some fresh bread myself.

In anticipation of tomorrow’s celebrations, I decided to make Irish Soda Bread.  This was my first official attempt at bread, that’s of course unless you consider banana bread a bread.

I went through several recipes before I settled on this one.  I think what sold me on it was what I read over at A Feast for the Eyes about Mrs. O’Callaghan. Plus, the recipe is really simple and uses only six ingredients, five of which I had at home. I only had to buy fresh buttermilk.

{I used 1.5% milkfat all-natural buttermilk}

I added all dry ingredients to the bowl of my KitchenAid mixer and set it to speed 3, using the dough hook. I added the buttermilk and let the mixture stir until combined. I flipped the dough onto a floured surface and followed the rest of the instructions as per the recipe.

The bread turned out so good that we had to force ourselves to stop eating it last night, but had some again for breakfast this morning. I’m saving what’s left to make corned beef sandwiches for St. Patty’s tomorrow.

Wow! It came out looking amazing! I’ve always been intimidated by cooking bread at home.
